This is one of my go-to recipes during the cooler seasons. It’s simple, quick & customizable. I have made this recipe every which way…double black beans, no pinto, red onion instead of white, corn. I love that you can truly make it your own!
Ingredients:
- Frozen or thawed chicken breast or tenderloins (1-2 lbs, depending on how many you’re feeding)
- 2-3 cans of beans (I prefer black beans & kidney beans and usually throw in another kind of bean to mix it up)
- 1 can of diced tomatoes
- 2-3 medium tomatoes, chopped
- 2/3 medium onion, chopped
- 1 green pepper, chopped
- 1/2 packet of Trader Joe’s taco spices or homemade taco seasoning
Directions
- Throw EVERYTHING in the crock pot and turn on high for 2-4 hours (depends on what type of crockpot you have).
- When the chicken looks cooked through (usually 2-3 hours on HIGH), shred the chicken with two forks & cover for another 30-45 minutes.
- Enjoy with Greek yogurt & a sprinkle of cheddar cheese. Avocado is another delicious topper.
